Ingredients (homes):

  • 1 1/2 pound Chicken, boneless, skinless, diced OR Salmon, boneless, skinless, diced
  • 1/2 cup Butter, salted
  • 8 oz. Cream Cheese
  • 1 1/2 tsp. Garlic Powder
  • 2 cup Milk
  • 8 oz. Parmesan Cheese, shredded
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 8 oz. Fettuccine Noodles, whole wheat

Ingredients (centers):

  • 4 1/2 pound Chicken, boneless, skinless, diced OR Salmon, boneless, skinless, diced
  • 1 1/2 cup Butter, salted
  • 1 1/2 pound Cream Cheese
  • 1 TBSP. + 1 1/2 tsp. Garlic Powder
  • 1 qt. + 1 pint Milk
  • 1 1/2 tsp. Parmesan Cheese, shredded
  • 1 1/2 tsp. Salt
  • 3/4 tsp. Pepper
  • 1 pound 9 oz. Fettuccine Noodles, whole wheat

Directions:

  1. Cook meat in 1 TBSP. butter. Set aside.
  2. Boil noodles according to package directions.
  3. Heat remaining butter. Stir in cream cheese and garlic until melted.
  4. Gradually whisk in milk.
  5. Bring to a boil. Reduce to low heat. Add Parmesan, salt and pepper.
  6. Simmer 5-10 minutes until thickened.
  7. Let sit for 5 minutes to thicken.
  8. Serve over pasta.

Serve:

1 portion = 2 oz. meat + 1/2 cup pasta (1 oz. eq. grain).
