Cheesy Broccoli and Rice

(9" x 13" pan)

Ingredients (homes):

  • 2 (10 oz.) bags Broccoli, frozen, chopped, thawed
  • 3 cups cooked Rice
  • 1 (22.6 oz.) can Cream Soup
  • 4 oz. (about 1/2 cup) Onion, frozen, chopped, thawed
  • 1 lb. 2 oz. (OR 4 1/2 cups) Cheddar Cheese, shredded

Ingredients (centers):

  • 2 lb. 13 oz. Broccoli, frozen, chopped, thawed
  • 6 3/4 cups cooked Rice
  • 1 (50 oz.) can Cream Soup
  • 9 oz. (about 1 1/4 cups) Onion, frozen, chopped, thawed
  • 2 lb. 9 oz. (OR 10 1/4 cups) Cheddar Cheese, shredded

Directions:

  1. Mix all ingredients in pan(s) coated with nonstick spray.
  2. Bake at 375 degrees F until a food thermometer reads 165 degrees F, about 45 minutes for a 9" x 13" pan.

Serve:

1 cup counts as 1 1/2 ounces meat/alternate, 1/2 ounce equivalent grain, and 1/3 cup veggies
